Coffee, Flowers & a 1996 Japanese Mini Truck: Meet Noonday Coffee

How One Tiny Honda K Truck Is Brewing Big Joy in West Michigan

Read Time: 1.5 minutes

What happens when a 1996 Honda Japanese mini truck, craft coffee, and fresh flowers collide?

You get something that makes West Michigan even cooler.

On this episode of Coffee with Steve & Margaux, we welcomed Colin and McKenna Nielsen, co-founders of Noonday Coffee, to the community. Recently relocating from Denver, this husband-and-wife team is launching a mobile coffee and flower concept out of a vintage Japanese K truck — and yes, it’s as charming as it sounds.

Their pop-up experience blends handcrafted espresso drinks with build-your-own bouquets in partnership with Petals & Leaves. Think: weddings, farmers markets, corporate events, and neighborhood gatherings — all served with creativity and heart.

McKenna, who grew up in the Grand Rapids area, shared why coming home to West Michigan felt right: the people are welcoming, the pace is balanced, and the natural beauty is unmatched. Colin added that spring in Michigan has already won him over.

This is exactly why we spotlight guests like Colin and McKenna. They are the entrepreneurs, creatives, and visionaries who make Grand Rapids and West Michigan extraordinary.

If you’re visiting, imagine stumbling upon a tiny coffee truck serving lattes and fresh blooms at a local market. If you’re considering moving here, know this: West Michigan supports bold ideas and homegrown businesses.

Noonday Coffee officially launches May 23. Follow them on Instagram and catch their first pop-up — you’ll want to say you were there from the beginning.

West Michigan isn’t just a place to live. It’s a place to build something meaningful.
